Ingredients
- 2 cups shredded cooked chicken
- 2 medium zucchinis, thinly sliced
- 1 cup shredded mozzarella cheese
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, layer the sliced zucchinis on the bottom.
- In a bowl, mix the shredded chicken with the diced tomatoes, Italian seasoning, salt, and pepper.
- Spread the chicken mixture over the zucchinis.
- Drizzle olive oil on top and then sprinkle with mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
For added flavor, consider drizzling balsamic glaze on top before serving. Store leftovers in an airtight container for up to 3-4 days, or freeze for later use.
