Ingredients

  • 2 cups shredded cooked chicken
  • 2 medium zucchinis, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, layer the sliced zucchinis on the bottom.
  3. In a bowl, mix the shredded chicken with the diced tomatoes, Italian seasoning, salt, and pepper.
  4. Spread the chicken mixture over the zucchinis.
  5. Drizzle olive oil on top and then sprinkle with mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
