Description

A convenient and flavorful one-pan dish combining tender chicken, zucchini, and spices, perfect for busy weeknights or cozy gatherings.


Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 medium zucchinis (diced)
  • 1 medium onion (diced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon smoked paprika (plus extra for garnish)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and black pepper (to taste)
  • 1/4 cup fresh cilantro or parsley (chopped)
  • 2 cups cooked rice (for serving)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a large baking dish with olive oil or cooking spray.
  3. In a large mixing bowl, toss together the chicken, zucchinis, and onion.
  4. Drizzle olive oil over the mixture and add garlic, smoked paprika, cumin, oregano, salt, and pepper. Mix well.
  5. Pour the mixture into the prepared baking dish, spreading it out in a single layer.
  6. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F and the zucchinis are tender.
  7. Once done, garnish with chopped cilantro or parsley and serve over warm rice.

Notes

Store leftovers in an airtight container for 3-4 days in the refrigerator. The dish can also be frozen for up to 2 months.
