Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked pepper
  • 3/4 teaspoon paprika
  • 2 tablespoons olive oil, divided
  • For The Sauce:
  • 1 tablespoon butter
  • 8 ounces brown mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/21 teaspoon dried thyme
  • 1/21 teaspoon dried rosemary
  • 1/2 cup dry white wine or chicken broth
  • Salt and pepper, to season if needed


Instructions

  1. Heat a skillet over medium-high heat. Add 1 tablespoon olive oil.
  2. Season chicken thighs with onion powder, garlic powder, thyme, rosemary, salt, pepper, and paprika.
  3. Place chicken thighs in skillet, leaving space between each piece. Cook for about 5 minutes on each side until golden brown and cooked through. Remove from skillet.
  4. In the same skillet, melt butter and add sliced mushrooms. Cook until softened and golden brown.
  5. Stir in minced garlic and cook for 1 minute until fragrant.
  6. Add white wine or chicken broth, scraping the bottom of the skillet to release the flavorful bits.
  7. Simmer sauce for a few minutes until slightly thickened.
  8. Return chicken thighs to the skillet, nestling them into the mushroom sauce. Let simmer for a couple of minutes.
  9. Sprinkle with freshly chopped parsley and serve warm.
