Description
Cheesy, saucy beef enchiladas made with seasoned ground beef, red enchilada sauce, and melted cheddar and Monterey Jack cheese. A comforting Mexican-inspired dinner.
Ingredients
- 1 lb ground beef
- 1 small yellow onion, diced
- 1 tablespoon taco seasoning (store-bought or homemade)
- 2 cups red enchilada sauce
- 8 flour or corn tortillas (enchilada size)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
Optional Toppings:
- Chopped cilantro
- Sliced black olives
- Sour cream
- Diced green onions
- Jalapeños
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C).
- Cook Beef: In a large skillet over medium-high heat, cook beef and onion until browned. Drain excess fat. Add taco seasoning and stir until coated.
- Prep Tortillas: Warm tortillas in the microwave or pan to prevent cracking.
- Assemble Enchiladas: Spoon beef mixture into each tortilla, add cheese, roll tightly, and place seam-side down in a baking dish.
- Top with Sauce & Cheese: Pour enchilada sauce evenly over tortillas. Sprinkle remaining cheese on top.
- Bake: Bake uncovered for 20 minutes, until cheese is melted and bubbly.
- Serve: Garnish with cilantro, sour cream, green onions, or your favorite toppings. Pair with Mexican rice or black beans.
Notes
For extra flavor, add black beans or corn to the beef mixture. Use green enchilada sauce for a variation.
