Description

Quick and delicious enchiladas packed with ground beef, cheese, and a flavorful enchilada sauce.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 8 tortillas
  • 2 cups shredded cheese
  • 1 can enchilada sauce
  • 1/2 cup chopped onions (optional)
  • 1/2 cup chopped bell peppers (optional)
  • Sour cream for serving (optional)
  • Cilantro for serving (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Drain excess fat.
  4. Stir in taco seasoning and cook according to package instructions.
  5. Warm the tortillas until pliable in a separate pan.
  6. On each tortilla, place a portion of the beef mixture, sprinkle with cheese, and roll them up.
  7. Place the rolled tortillas seam-side down in a baking dish.
  8. Pour enchilada sauce over the top and sprinkle with remaining cheese.
  9. Bake for 20-25 minutes until bubbly and cheese is melted.
  10. Serve with sour cream and cilantro if desired.

Notes

Be sure to warm the tortillas for best results and avoid overstuffing them.
