Quick and delicious enchiladas packed with ground beef, cheese, and a flavorful enchilada sauce.
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 8 tortillas
- 2 cups shredded cheese
- 1 can enchilada sauce
- 1/2 cup chopped onions (optional)
- 1/2 cup chopped bell peppers (optional)
- Sour cream for serving (optional)
- Cilantro for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Drain excess fat.
- Stir in taco seasoning and cook according to package instructions.
- Warm the tortillas until pliable in a separate pan.
- On each tortilla, place a portion of the beef mixture, sprinkle with cheese, and roll them up.
- Place the rolled tortillas seam-side down in a baking dish.
- Pour enchilada sauce over the top and sprinkle with remaining cheese.
- Bake for 20-25 minutes until bubbly and cheese is melted.
- Serve with sour cream and cilantro if desired.
Notes
Be sure to warm the tortillas for best results and avoid overstuffing them.
