A simple and delicious dinner option, these baked chicken thighs are juicy, packed with flavor, and easy to prepare.


Ingredients

  • 2 pounds boneless skinless chicken thighs (about 8 pieces)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder


Instructions

  1. Remove chicken from the refrigerator 20 minutes before cooking. Pat the chicken dry with paper towels.
  2. Season both sides of the chicken with kosher salt. Wait 2 minutes, then add the remaining spices.
  3. Preheat the oven to 400°F (200°C) with the rack in the center position.
  4. Brush a baking sheet with 1 tablespoon of olive oil. Arrange the chicken thighs on the sheet with space between each piece. Drizzle the remaining oil over the thighs.
  5. Bake for 18 minutes. Flip the thighs and bake for an additional 14 minutes.
  6. Check the internal temperature of the chicken; it should reach 175°F (80°C) at the thickest part.
  7. Tent the chicken with foil and let it rest for 3 minutes before serving.

Notes

For extra flavor, marinate the chicken in olive oil, garlic, and spices for a few hours before baking. For a crispier texture, broil the chicken for the last 2-3 minutes of baking.
