A simple and delicious dinner option, these baked chicken thighs are juicy, packed with flavor, and easy to prepare.
Ingredients
- 2 pounds boneless skinless chicken thighs (about 8 pieces)
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
Instructions
- Remove chicken from the refrigerator 20 minutes before cooking. Pat the chicken dry with paper towels.
- Season both sides of the chicken with kosher salt. Wait 2 minutes, then add the remaining spices.
- Preheat the oven to 400°F (200°C) with the rack in the center position.
- Brush a baking sheet with 1 tablespoon of olive oil. Arrange the chicken thighs on the sheet with space between each piece. Drizzle the remaining oil over the thighs.
- Bake for 18 minutes. Flip the thighs and bake for an additional 14 minutes.
- Check the internal temperature of the chicken; it should reach 175°F (80°C) at the thickest part.
- Tent the chicken with foil and let it rest for 3 minutes before serving.
Notes
For extra flavor, marinate the chicken in olive oil, garlic, and spices for a few hours before baking. For a crispier texture, broil the chicken for the last 2-3 minutes of baking.
