Ingredients
- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the grill or a skillet over medium heat.
- In a bowl, combine olive oil, lemon juice, lemon zest, paprika, cumin, salt, and pepper.
- Add chicken breasts to the marinade and let sit for at least 15 minutes.
- While chicken is marinating, heat a skillet over medium heat and sauté sliced zucchini for about 5-7 minutes until tender.
