- 1 pound fresh okra, ends trimmed and sliced into 1-inch rounds
- 2 tablespoons avocado oil (or extra virgin olive oil)
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon fennel seeds
- ½ teaspoon cumin seeds or ¼ teaspoon ground cumin
- ½ teaspoon salt, or to taste
- Optional Seasoning Variations: Cajun seasoning + cayenne, Italian seasoning + grated Parmesan, BBQ sauce glaze, Black pepper + lemon juice, Sesame oil + grated ginger + soy sauce, Baharat spice blend
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, combine sliced okra, oil, garlic powder, smoked paprika, fennel seeds, cumin, and salt.
- Toss until okra is evenly coated.
- Spread okra in a single layer on the baking sheet.
- Roast for 25–30 minutes, flipping once halfway through.
- Remove from oven when golden brown and crispy at the edges.
- Serve hot and enjoy!
Notes
Use parchment paper to avoid sticking and ensure even crisping. Try different seasoning combos for variety. Best enjoyed fresh from the oven.
