Description

  • 1 tbsp lemon juice
  • 2 tsp cinnamon
  • ½ cup salted butter, softened
  • ¾ cup white granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup buttermilk (or homemade substitute: ½ tsp lemon juice + ½ cup milk)
  • ¼ cup brown sugar
  • 1 tsp cinnamon (for topping)
  • ¾ cup chopped walnuts or pecans (optional)
  • ½ cup powdered sugar + 1–2 tbsp milk or cream (for glaze)

Instructions

  1. Prep Apples: Peel, core, and chop apples into ¼-inch pieces. Toss with lemon juice and cinnamon. Let sit for 10 minutes.
  2. Make the Batter: Cream butter and sugar until fluffy (3–4 minutes). Add eggs, vanilla, and salt. Mix well. In a separate bowl, combine flour, baking powder, and baking soda. Add dry ingredients to wet, alternating with buttermilk. Fold in half of the apple mixture and nuts (if using).
  3. Layer & Top: Preheat oven to 350°F (175°C). Line a 9×5 loaf pan with parchment paper. Pour in half the batter, layer with remaining apples, then add the rest of the batter. Mix brown sugar and cinnamon, and sprinkle over the top.
  4. Bake: Bake 50–60 minutes. Check with a toothpick. Let cool for 15 minutes, then transfer to a wire rack.
  5. Glaze: Mix powdered sugar with milk or cream. Drizzle over cooled bread before serving.

Notes

For a more pronounced apple flavor, use tart apples like Granny Smith. Bread can be stored at room temperature for up to 3 days or refrigerated for longer shelf life.
