Description

This festive Easter Egg Fruit Pizza is made with a sugar cookie crust, cream cheese frosting, and vibrant fresh fruit arranged in colorful patterns. It’s the perfect spring dessert for Easter brunch or celebrations.

Ingredients

Scale
  • 1 roll (16.5 oz) sugar cookie dough
  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Fresh fruit for topping (suggested):
  • Strawberries
  • Blueberries
  • Kiwi
  • Mandarin oranges
  • Raspberries
  • Grapes
  • 1/4 cup apple jelly, melted (for glaze)

Instructions

  1. Prep the Dough: Let sugar cookie dough sit at room temperature for 15 minutes. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Shape & Bake: Shape dough into a 12×8-inch oval (egg shape). Bake for 13–15 minutes or until edges are lightly golden. Let cool completely.
  3. Make the Frosting: In a bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and fluffy.
  4. Frost the Base: Spread cream cheese frosting evenly over the cooled cookie base, leaving a slight border around the edge.
  5. Add the Fruit: Decorate with sliced fresh fruit, arranging it in colorful patterns to resemble an Easter egg design.
  6. Glaze: Warm the apple jelly in the microwave and gently brush over the fruit to give it a shiny finish.
  7. Chill & Serve: Refrigerate for at least 1 hour before serving. Slice and enjoy!
