Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 1/2 cup cucumber, finely grated
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dried dill, salt, and black pepper to make the tzatziki sauce.
- In a baking dish, arrange the chicken breasts in a single layer and pour the tzatziki sauce over the chicken.
- Spread the cooked rice around the chicken in the baking dish and top with halved cherry tomatoes.
- Drizzle with olive oil.
- Cover with aluminum foil and bake for 30-35 minutes.
- For a golden-brown finish, remove the foil for the last 5-10 minutes of baking.
- Once cooked, remove from the oven and serve warm.

Store leftovers in an airtight container for up to 3-4 days. You can freeze this dish for up to 2 months.
