Description

A refreshing, mouth-watering meal featuring tender chicken breasts with creamy tzatziki sauce served over fluffy rice and cherry tomatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, finely grated
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dried dill, salt, and black pepper to make the tzatziki sauce.
  3. In a baking dish, arrange the chicken breasts in a single layer and pour the tzatziki sauce over the chicken.
  4. Spread the cooked rice around the chicken in the baking dish and top with halved cherry tomatoes.
  5. Drizzle with olive oil.
  6. Cover with aluminum foil and bake for 30-35 minutes.
  7. For a golden-brown finish, remove the foil for the last 5-10 minutes of baking.
  8. Once cooked, remove from the oven and serve warm.

Notes

Store leftovers in an airtight container for up to 3-4 days. You can freeze this dish for up to 2 months.
