A refreshing and creamy dill pickle pasta salad that combines comfort food with bold flavors, perfect for picnics, barbecues, or weeknight dinners.
Ingredients
- 8 oz elbow macaroni
- 1 cup dill pickles, chopped
- 1/2 cup red onion, diced
- 1/2 cup celery, chopped
- 1 cup mayonnaise
- 1/4 cup pickle juice
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente, then drain and cool.
- Chop the dill pickles, red onion, and celery into small pieces.
- In a large bowl, mix diced pickles, red onion, celery, mayonnaise, pickle juice, and garlic powder until smooth.
- Gently fold cooled macaroni into the dressing mixture.
- Season with salt and pepper as desired.
- Chill in the refrigerator for at least one hour before serving.
Notes
For extra crunch, consider adding bell peppers or shredded carrots. Chilling the salad longer enhances flavor.
