A refreshing and tangy pasta salad that combines rotini pasta with dill pickles, fresh vegetables, and a creamy dressing.
Ingredients
- 8 ounces rotini pasta
- 1 cup dill pickles, chopped
- 1/2 cup red onion, diced
- 1/2 cup celery, diced
- 1 cup mayonnaise
- 2 tablespoons dill pickle juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to the package instructions. Once cooked, drain the pasta and allow it to cool.
- In a large mixing bowl, combine the chopped dill pickles, diced red onion, and diced celery.
- Add the cooled pasta to the bowl, mixing gently to combine the ingredients.
- In a separate bowl, whisk together the mayonnaise, dill pickle juice, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and stir until everything is evenly coated.
- For maximum flavor, chill the salad in the refrigerator for at least one hour before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 2 months, but texture may change.
