Description

A refreshing and tangy pasta salad that combines rotini pasta with dill pickles, fresh vegetables, and a creamy dressing.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup dill pickles, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup celery, diced
  • 1 cup mayonnaise
  • 2 tablespoons dill pickle juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Cook the rotini pasta according to the package instructions. Once cooked, drain the pasta and allow it to cool.
  2. In a large mixing bowl, combine the chopped dill pickles, diced red onion, and diced celery.
  3. Add the cooled pasta to the bowl, mixing gently to combine the ingredients.
  4. In a separate bowl, whisk together the mayonnaise, dill pickle juice, garlic powder, salt, and pepper until smooth.
  5. Pour the dressing over the pasta mixture and stir until everything is evenly coated.
  6. For maximum flavor, chill the salad in the refrigerator for at least one hour before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 2 months, but texture may change.
