Description
A warm, creamy, and utterly comforting pasta dish that can be whipped up in under 30 minutes, featuring a rich blend of creamy cheese and zesty Rotel tomatoes.
Ingredients
- 8 ounces pasta (penne, fusilli, or spaghetti)
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10 ounces) Rotel diced tomatoes with green chilies
- 8 ounces cream cheese, cubed
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional: chopped cilantro or green onions for garnish
Instructions
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large pan, heat olive oil over medium heat. Add chopped onions and minced garlic; sauté until onions are translucent.
- Add the can of Rotel tomatoes into the pan and cook for 3–5 minutes.
- Add the cream cheese cubes and stir until melted and combined.
- Mix in the drained pasta, then sprinkle cheddar cheese over and stir until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with cilantro or green onions if desired.
