Description

A warm, creamy, and utterly comforting pasta dish that can be whipped up in under 30 minutes, featuring a rich blend of creamy cheese and zesty Rotel tomatoes.


Ingredients

  • 8 ounces pasta (penne, fusilli, or spaghetti)
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies
  • 8 ounces cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: chopped cilantro or green onions for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add chopped onions and minced garlic; sauté until onions are translucent.
  3. Add the can of Rotel tomatoes into the pan and cook for 3–5 minutes.
  4. Add the cream cheese cubes and stir until melted and combined.
  5. Mix in the drained pasta, then sprinkle cheddar cheese over and stir until melted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with cilantro or green onions if desired.

Notes

Store in an airtight container for 3-4 days in the fridge, or freeze for up to 2 months.
