Ingredients

  • 1 small head of cabbage, shredded
  • 2 carrots, grated
  • 1 red bell pepper, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1/4 cup sesame seeds, toasted
  • 1/3 cup rice vinegar
  • 1/4 cup soy sauce (low sodium if preferred)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, grated
  • 1 clove garlic, minced


Instructions

  1. In a large bowl, combine the shredded cabbage, grated carrots, red bell pepper, green onions, cilantro, and sesame seeds. Toss briefly to mix.
  2. In a separate bowl, whisk together the rice vinegar, soy sauce, honey, sesame oil, ginger, and garlic to make the dressing. Taste and adjust sweetness or tanginess as needed.
  3. Pour the dressing over the slaw and toss to combine thoroughly.
  4. Let sit for at least 10 minutes to allow flavors to meld.
  5. Serve chilled or at room temperature as a side or light main dish. Add peanuts or grilled protein for extra flavor.
