Ingredients
- 2 cups mixed greens
- 1 cup roasted butternut squash, cubed
- 1 cup apples, diced
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, roasted butternut squash, diced apples, walnuts, dried cranberries, and feta cheese.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or chill for later.
