Description
A refreshing summer salad made with sweet watermelon, tangy feta, and fresh mint. Perfect for picnics, BBQs, or a light side dish.
Ingredients

- 3 lbs seedless watermelon (about 1 small), rind removed and cut into 1-inch cubes
- 4 oz feta cheese, crumbled (preferably sheep’s milk feta)
- 1 tbsp lemon juice
- 1 tsp lemon zest, finely chopped
- ¼ cup fresh mint leaves, roughly chopped
- 3 tbsp extra virgin olive oil, plus more for drizzling
- Kosher salt and freshly ground black pepper, to taste
- (Optional) a handful of arugula, sliced cucumber, or red onions
Instructions
- Cut the watermelon into bite-sized 1-inch cubes. Chill if desired.
- Finely zest the lemon and chop the mint leaves.
- In a large bowl, combine watermelon, lemon juice, half the zest, mint, and olive oil. Toss gently.
- Season lightly with salt and pepper.
- Crumble feta cheese over the salad. Do not fully mix to preserve texture.
- Sprinkle remaining lemon zest, drizzle more olive oil, and serve immediately.
Notes
Best served immediately after preparing. You can also experiment with arugula or red onions for extra depth.
