Description

A refreshing summer salad made with sweet watermelon, tangy feta, and fresh mint. Perfect for picnics, BBQs, or a light side dish.

Ingredients

Scale
  • 3 lbs seedless watermelon (about 1 small), rind removed and cut into 1-inch cubes
  • 4 oz feta cheese, crumbled (preferably sheep’s milk feta)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest, finely chopped
  • ¼ cup fresh mint leaves, roughly chopped
  • 3 tbsp extra virgin olive oil, plus more for drizzling
  • Kosher salt and freshly ground black pepper, to taste
  • (Optional) a handful of arugula, sliced cucumber, or red onions

Instructions

  1. Cut the watermelon into bite-sized 1-inch cubes. Chill if desired.
  2. Finely zest the lemon and chop the mint leaves.
  3. In a large bowl, combine watermelon, lemon juice, half the zest, mint, and olive oil. Toss gently.
  4. Season lightly with salt and pepper.
  5. Crumble feta cheese over the salad. Do not fully mix to preserve texture.
  6. Sprinkle remaining lemon zest, drizzle more olive oil, and serve immediately.

Notes

Best served immediately after preparing. You can also experiment with arugula or red onions for extra depth.
