Description

A speedy and delicious Teriyaki Tofu Stir-Fry, perfect for busy weeknights. This vegetarian dish is easy to make and can be customized with your favorite vegetables.


Ingredients

  • 14 oz firm tofu, cubed
  • 2 cups mixed vegetables (Bell peppers, broccoli, and carrots)
  • 3 tablespoons teriyaki sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon sesame seeds


Instructions

  1. Press the tofu by patting it dry with paper towels, placing it on a plate, covering with another plate, and adding a weight for 10 minutes.
  2. Heat vegetable oil in a pan over medium heat.
  3. Sauté minced garlic and ginger for about 1 minute until fragrant.
  4. Add pressed tofu cubes and cook until golden brown, about 5-7 minutes.
  5. Add mixed vegetables and stir-fry for about 5 minutes until still crunchy.
  6. Pour in teriyaki sauce, stir, and let it mingle for another 2 minutes.
  7. Garnish with sesame seeds before serving.

Notes

Feel free to substitute with chicken or shrimp instead of tofu, or use different veggies based on availability.
