Description
This classic tomato pie features layers of ripe summer tomatoes, onions, fresh herbs, and a creamy cheese topping baked in a golden pie crust. A Southern favorite that’s perfect warm or at room temperature.

- 6–7 ripe tomatoes, sliced
- 1 yellow onion, thinly sliced
- ¾ cup mayonnaise
- ⅓ cup shredded mozzarella cheese
- ⅓ cup grated Parmesan cheese
- 2 tsp fresh basil, chopped
- 2 tsp fresh oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Pre-bake the pie shell for 8–10 minutes until lightly browned.
- Drain the tomatoes: Place sliced tomatoes on paper towels, lightly salt, and let them sit for 30–45 minutes. Blot dry to remove excess moisture.
- Optional: Sauté onions for a milder flavor.
- Layer onions and tomatoes in the pre-baked crust. Season with black pepper.
- Mix mayonnaise, mozzarella, and Parmesan cheese in a bowl. Spread the mixture evenly over the tomatoes.
- Bake for 25–30 minutes until golden brown and bubbly.
- Garnish with fresh basil and oregano.
- Let rest for 10 minutes before serving.
Notes
Draining the tomatoes well is key to avoiding a soggy pie. For a richer flavor, try using heirloom tomatoes or add a bit of garlic to the cheese mixture.
