Description

This classic tomato pie features layers of ripe summer tomatoes, onions, fresh herbs, and a creamy cheese topping baked in a golden pie crust. A Southern favorite that’s perfect warm or at room temperature.

Ingredients

Scale
  • 1 (9-inch) pie shell
  • 67 ripe tomatoes, sliced
  • 1 yellow onion, thinly sliced
  • ¾ cup mayonnaise
  • ⅓ cup shredded mozzarella cheese
  • ⅓ cup grated Parmesan cheese
  • 2 tsp fresh basil, chopped
  • 2 tsp fresh oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Pre-bake the pie shell for 8–10 minutes until lightly browned.
  2. Drain the tomatoes: Place sliced tomatoes on paper towels, lightly salt, and let them sit for 30–45 minutes. Blot dry to remove excess moisture.
  3. Optional: Sauté onions for a milder flavor.
  4. Layer onions and tomatoes in the pre-baked crust. Season with black pepper.
  5. Mix mayonnaise, mozzarella, and Parmesan cheese in a bowl. Spread the mixture evenly over the tomatoes.
  6. Bake for 25–30 minutes until golden brown and bubbly.
  7. Garnish with fresh basil and oregano.
  8. Let rest for 10 minutes before serving.

Notes

Draining the tomatoes well is key to avoiding a soggy pie. For a richer flavor, try using heirloom tomatoes or add a bit of garlic to the cheese mixture.
