Description
Crunchy mixed nut and puffed rice bars lightly sweetened with syrup, topped or dipped in dark chocolate for a satisfying snack or treat.
Ingredients
2½ cups mixed unsalted nuts (almonds, peanuts, cashews) ½ cup puffed rice ¼ cup brown rice syrup or maple syrup 1½ tsp vanilla extract ½ tsp sea salt 1 cup dark chocolate chips 2 tsp coconut oil
Instructions
1. Toast nuts in a 325°F oven for 5–8 minutes. 2. Mix nuts and puffed rice in a large bowl. 3. Warm syrup for 30 seconds, stir in vanilla and sea salt. 4. Pour over nut mixture and combine well. 5. Press mixture into an 8×8” parchment-lined pan. 6. Bake for 18–20 minutes or chill for a no-bake version. 7. Melt chocolate with coconut oil, drizzle or dip bars. 8. Sprinkle with flaky salt and let set before serving.
Notes
Bars can be stored in an airtight container at room temperature for up to 1 week, or refrigerated for extra firmness.
