Dark Chocolate and Sea Salt Nut Bars

Description

Delicious and healthy snack bars offering a perfect balance of sweet and salty, packed with nuts and dark chocolate.


Ingredients

  • 2 1/2 cups unsalted nuts of choice (3/4 cup cashews, 3/4 cup peanuts, 1 cup almonds)
  • 1/2 cup puffed rice
  • 1/4 cup brown rice syrup
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon sea salt
  • 1 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • Optional: flaky salt for topping


Instructions

  1. Preheat your oven to 325˚F (160˚C).
  2. Spread the nuts in a single layer on a rimmed sheet pan and bake for 5-8 minutes until they smell fragrant and turn lightly browned.
  3. Line an 8×8-inch pan with parchment paper and set it aside.
  4. In a large mixing bowl, mix the nuts and puffed rice together.
  5. In a microwave-safe bowl, warm the brown rice syrup in the microwave for 30 seconds.
  6. Whisk in the vanilla extract and sea salt until well combined. Pour this mixture over the nuts and puffed rice, stirring until everything is evenly coated.
  7. Press the nut mixture firmly into the prepared pan.
  8. Bake for 18-20 minutes. Let it cool for about 30 minutes, then transfer to a cutting board.
  9. Cut the bars in half lengthwise, and then cut each half into 5-6 thin bars. Allow them to cool completely.
  10. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second bursts, stirring well between each until fully melted.
  11. Dip the bottom of each bar into the melted chocolate, then place them on a baking sheet lined with parchment paper.
  12. Drizzle more melted chocolate over the top of each bar and sprinkle with flaky salt if desired.
  13. Refrigerate until the chocolate is set before enjoying!

Notes

Ensure nuts are toasted for a richer flavor. Customize with dried fruit or seeds as desired.
