Description
Delicious and healthy snack bars offering a perfect balance of sweet and salty, packed with nuts and dark chocolate.
Ingredients
- 2 1/2 cups unsalted nuts of choice (3/4 cup cashews, 3/4 cup peanuts, 1 cup almonds)
- 1/2 cup puffed rice
- 1/4 cup brown rice syrup
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon sea salt
- 1 cup dark chocolate chips
- 2 teaspoons coconut oil
- Optional: flaky salt for topping
Instructions
- Preheat your oven to 325˚F (160˚C).
- Spread the nuts in a single layer on a rimmed sheet pan and bake for 5-8 minutes until they smell fragrant and turn lightly browned.
- Line an 8×8-inch pan with parchment paper and set it aside.
- In a large mixing bowl, mix the nuts and puffed rice together.
- In a microwave-safe bowl, warm the brown rice syrup in the microwave for 30 seconds.
- Whisk in the vanilla extract and sea salt until well combined. Pour this mixture over the nuts and puffed rice, stirring until everything is evenly coated.
- Press the nut mixture firmly into the prepared pan.
- Bake for 18-20 minutes. Let it cool for about 30 minutes, then transfer to a cutting board.
- Cut the bars in half lengthwise, and then cut each half into 5-6 thin bars. Allow them to cool completely.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second bursts, stirring well between each until fully melted.
- Dip the bottom of each bar into the melted chocolate, then place them on a baking sheet lined with parchment paper.
- Drizzle more melted chocolate over the top of each bar and sprinkle with flaky salt if desired.
- Refrigerate until the chocolate is set before enjoying!
Notes
Ensure nuts are toasted for a richer flavor. Customize with dried fruit or seeds as desired.
