Ingredients
- 2 large cucumbers, thinly sliced
- 1 cup sweet peppers (red, yellow, or orange), thinly sliced
- ½ small red onion, very thinly sliced
- ¼ cup fresh parsley, finely chopped
- ¼ cup feta cheese, crumbled (optional)
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- Salt & pepper to taste
Instructions
- Prep the veggies: Thinly slice cucumbers, sweet peppers, and red onions. Chop parsley and crumble feta.
- Combine: In a large mixing bowl, toss together the cucumbers, sweet peppers, and onions.
- Flavor up: Sprinkle with chopped parsley and feta.
- Dress it: Drizzle olive oil and lemon juice, season with salt and pepper.
- Toss gently: Mix lightly to avoid breaking the cucumber slices. Serve chilled.
