A vibrant and refreshing cucumber shrimp salad that combines fresh ingredients for a perfect summer dish.
Ingredients
- 2 cups of diced cucumber
- 1/2 cup of diced red onion
- 1/4 cup of chopped fresh cilantro
- 1 lb of fresh shrimp
- 1/4 cup of fresh lime juice
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Bring a pot of water to a boil and cook the shrimp for 2-3 minutes until pink.
- Drain and cool the shrimp, placing them in ice water if desired.
- In a bowl, combine cucumber, red onion, and cilantro.
- Add the cooled shrimp to the veggies.
- In a separate bowl, whisk lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For additional flavor, allow the salad to marinate longer in the fridge, and consider adding diced avocado or using different proteins like crab or chicken.
