Ingredients
- 2 large cucumbers
- 1 cup hummus (store-bought or homemade)
- 1/4 cup cherry tomatoes, diced
- 1/4 cup bell pepper, diced

Instructions
- Slice cucumbers into thick rounds, about an inch thick.
- Scoop out the center of each cucumber slice to create a little boat.
