Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • Salt and pepper to taste
  • Olive oil or cooking spray


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the cottage cheese and eggs until well combined.
  3. Stir in the chopped spinach, bell pepper, onion, and shredded cheese.
  4. Season with salt and pepper.
  5. Grease a pie dish or baking pan with olive oil or cooking spray.
  6. Pour the mixture into the prepared dish and spread evenly.
  7. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and slightly golden on top.
  8. Allow it to cool for a few minutes before slicing and serving.
