A delicious and healthy breakfast quiche packed with protein from cottage cheese and eggs, and loaded with veggies.
Ingredients
- 1 cup cottage cheese
- 6 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- Salt and pepper to taste
- Olive oil or cooking spray
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the cottage cheese and eggs until well combined.
- Stir in the chopped spinach, bell pepper, onion, and shredded cheese.
- Season with salt and pepper.
- Grease a pie dish or baking pan with olive oil or cooking spray.
- Pour the mixture into the prepared dish and spread evenly.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and slightly golden on top.
- Allow it to cool for a few minutes before slicing and serving.
Notes
Feel free to mix and match vegetables based on availability. Can be frozen for up to 2 months.
