Delicious cookies that combine the rich flavor of pecan pie with a soft, chewy texture.
Ingredients
- 1/2 cup butter (softened)
- 1/3 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg (at room temperature)
- 1 tsp vanilla extract
- 2 1/3 cups flour
- 1/4 tsp salt
- 1 tsp baking powder
- 5 tbsp butter (for filling)
- 2/3 cup brown sugar
- 1 1/4 cups chopped pecans
- 1 tsp vanilla extract (for filling)
- 1/3 cup heavy cream
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt (for filling)
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large mixing bowl or stand mixer, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar.
- Add the egg and vanilla extract to the mixture and mix until well combined.
- Gradually add the flour, salt, and baking powder, mixing until just combined.
- Scoop out 9 equally sized cookie balls and place them on the prepared baking sheet.
- Flatten each cookie ball to about 1 inch in thickness and press down the center to create space for the pecan filling.
- Bake in the preheated oven for 8-9 minutes and then let them cool on the baking sheet.
- For the filling, melt 5 tablespoons of butter in a saucepan and add brown sugar, chopped pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and a pinch of salt. Stir until combined and thickened.
- Once the cookies have cooled, fill the center of each cookie with the pecan pie filling.
Notes
Serve warm or at room temperature. Cookies can be enjoyed alone or with vanilla ice cream.
