Description

Deliciously soft and chewy cookies that combine the heartiness of oats with sweet chocolate chips.

Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg (at room temperature)
  • 1 1/4 cup old fashioned whole rolled oats
  • 1 cup all-purpose flour
  • 1/8 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk chocolate chips

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper. Set it aside.
  2. Cream together the softened butter, brown sugar, and granulated sugar in a mixing bowl until well combined.
  3. Add the egg and vanilla extract, and beat for about 3 minutes until light and fluffy.
  4. Gradually mix in the flour, oats, cinnamon, baking soda, and salt, scraping the sides of the bowl until everything is combined.
  5. Fold in the milk chocolate chips gently.
  6. Using a large cookie scoop, scoop out 8 equally sized balls of cookie dough and place them on the prepared baking sheet. Gently press down to about 1 inch in thickness.
  7. Bake in the preheated oven for 11-12 minutes, being careful not to overbake.
  8. Let the cookies cool on the baking sheet for about 20 minutes before transferring to a cooling rack to cool completely.

Notes

For best results, use old-fashioned rolled oats, and do not over-bake the cookies.
