Description

Ingredients

  • 3 pounds chicken breast (or boneless, skinless thighs)
  • ¾ cup soy sauce (low sodium preferred)
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • ⅓ cup mirin
  • 4 tablespoons cornstarch
  • 2 tablespoons water
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Sesame seeds (for garnish)
  • Sliced green onions (for garnish)


Instructions

  1. Make the Sauce: In a bowl, whisk together soy sauce, brown sugar, white sugar, mirin, cornstarch, water, garlic, and ginger until smooth.
  2. Add to Crockpot: Place the chicken breasts into the slow cooker and pour the sauce evenly over the top.
  3. Cook: Set to LOW for 6 hours or HIGH for 3 hours, until chicken is tender and shreds easily.
  4. Shred and Stir: Remove the chicken, shred it with two forks, then return to the crockpot and stir to combine with the sauce.
  5. Serve: Spoon over steamed rice and garnish with sesame seeds and sliced green onions.

Notes

For extra flavor, marinate the chicken in the sauce for 30 minutes before slow cooking. You can also add steamed broccoli or sautéed bell peppers for a complete meal.
