Description

A comforting and hearty crockpot potato soup that’s easy to prepare and perfect for busy days.


Ingredients

  • 6 medium potatoes, diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup bacon, cooked and crumbled
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chives or green onions for garnish


Instructions

  1. In a crockpot, combine the diced potatoes, chopped onion, vegetable broth, and minced garlic.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  3. Mash some of the potatoes to thicken the soup.
  4. Stir in the heavy cream and cooked bacon.
  5. Season with salt and pepper to taste.
  6. Garnish with chives or green onions before serving.

Notes

Serve hot with crusty bread or a side salad. Add cheese for an extra treat. Store leftovers in an airtight container in the fridge for up to 3-5 days, or freeze for longer storage.
