Description

A hearty and comforting one-pot slow cooker meal featuring smoked kielbasa, tender green beans, and creamy potatoes simmered in seasoned chicken broth. Great as a stand-alone meal or served over rice or noodles.


Ingredients

  • 1 pound kielbasa, sliced into ½” pieces
  • 8 cups fresh green beans, trimmed and chopped
  • 4 large potatoes, peeled and cubed
  • 3 cups chicken broth
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
  • Optional Add-ins: Cherry tomatoes, carrots, red pepper flakes for heat


Instructions

  1. Wash and prep the green beans and potatoes.
  2. Slice the kielbasa into ½” bite-sized rounds.
  3. Place the kielbasa, green beans, and potatoes into your slow cooker.
  4. Pour in the chicken broth.
  5. Add the onion powder, garlic powder, salt, and pepper.
  6. Stir gently to combine all ingredients.
  7. Cover and cook:
    • On HIGH: 4 hours
    • On LOW: 6 hours
  8. Serve hot on its own or over rice or egg noodles if desired.

Notes

You can swap kielbasa for smoked turkey sausage. For extra color and nutrients, add carrots or cherry tomatoes in the last hour of cooking. Sprinkle red pepper flakes for a spicy twist.
