Description
A rich, creamy slow cooker chicken dish made with garlic, cream cheese, Parmesan, and cream of chicken soup. Perfect for a comforting dinner served with pasta, rice, or mashed potatoes.
Ingredients
- 2 pounds boneless, skinless chicken breasts (or thighs)
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- ⅛ teaspoon salt
- 1 can (10.5 oz) cream of chicken soup
- 6 cloves garlic, minced
- 4 oz cream cheese, softened
- ⅓ cup grated Parmesan cheese
- Optional garnish: Fresh chopped parsley
Instructions
- Place chicken in the bottom of the Crockpot. Season with salt, pepper, and garlic powder.
- Pour the cream of chicken soup and minced garlic over the chicken. Spread to coat evenly.
- Cover and cook on LOW for 3–4 hours, or until chicken reaches 165°F (74°C) internal temperature.
- Remove the chicken and set aside. Add cream cheese and Parmesan to the slow cooker and whisk until smooth.
- Return chicken to the sauce, stir to coat, and cook a few more minutes if needed.
- Garnish with fresh chopped parsley and serve hot over pasta, rice, or vegetables.
Notes
For a thinner sauce, add ¼ cup of milk or chicken broth when whisking in the cream cheese. You can shred the chicken before returning it to the sauce for a more stew-like texture.
