Description

A rich, creamy slow cooker chicken dish made with garlic, cream cheese, Parmesan, and cream of chicken soup. Perfect for a comforting dinner served with pasta, rice, or mashed potatoes.


Ingredients

  • 2 pounds boneless, skinless chicken breasts (or thighs)
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon salt
  • 1 can (10.5 oz) cream of chicken soup
  • 6 cloves garlic, minced
  • 4 oz cream cheese, softened
  • ⅓ cup grated Parmesan cheese
  • Optional garnish: Fresh chopped parsley


Instructions

  1. Place chicken in the bottom of the Crockpot. Season with salt, pepper, and garlic powder.
  2. Pour the cream of chicken soup and minced garlic over the chicken. Spread to coat evenly.
  3. Cover and cook on LOW for 3–4 hours, or until chicken reaches 165°F (74°C) internal temperature.
  4. Remove the chicken and set aside. Add cream cheese and Parmesan to the slow cooker and whisk until smooth.
  5. Return chicken to the sauce, stir to coat, and cook a few more minutes if needed.
  6. Garnish with fresh chopped parsley and serve hot over pasta, rice, or vegetables.

Notes

For a thinner sauce, add ¼ cup of milk or chicken broth when whisking in the cream cheese. You can shred the chicken before returning it to the sauce for a more stew-like texture.
