Ingredients
- 2 Chicken breasts
- 4 Potatoes, diced
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 Onion, chopped
- 2 cloves Garlic, minced
- Salt, to taste
- Pepper, to taste
- 1 teaspoon Thyme
- Optional: Crispy bacon, for topping
- Optional: Shredded cheese, for topping
- Optional: Sour cream, for topping
- Bread or salad, for serving
Instructions
- In a crockpot, combine chicken breasts, diced potatoes, onion, garlic, and chicken broth.
- Season with salt, pepper, and thyme.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the pot and add heavy cream.
- Stir well and let it continue to cook.
- Serve hot, topped with crispy bacon, shredded cheese, and a dollop of sour cream as desired, alongside warm bread or a fresh salad.
Notes
Cut potatoes into small pieces for even cooking. Use low-sodium chicken broth for less saltiness. Add vegetables like carrots or celery for more nutrition. For spice, consider red pepper flakes.
