Description

A warm and comforting chicken corn chowder that’s easy to make in your slow cooker.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • Optional toppings: crispy bacon, shredded cheese, sour cream


Instructions

  1. In a crockpot, combine the shredded chicken, corn, onion, garlic, chicken broth, salt, pepper, and paprika.
  2. Stir well and cook on low for 360-480 minutes or high for 180-240 minutes.
  3. About 30 minutes before serving, stir in the heavy cream.
  4. Taste and adjust seasoning if needed.
  5. Serve hot and top with bacon, cheese, or sour cream if desired.

Notes

For a thicker chowder, blend a portion before adding cream. This recipe can be made vegetarian by omitting chicken and using vegetable broth.
