Ingredients
- 3 Cups Baby Carrots
- 2 Cups Mushrooms (sliced)
- 2 Cups Beef Broth
- 1 Cup Red Wine (optional)
- 2 Tbsp Tomato Paste
- 1 Bay Leaf
- 8 Sprigs Fresh Thyme
- 1 Tbsp Garlic (minced)
- Salt and pepper, to taste
- Bone-in beef short ribs
Instructions
- Season the short ribs with salt and pepper on all sides.
- Brown the ribs in a large skillet with melted butter for 20 seconds on each side.
- Add baby carrots, mushrooms, beef broth, red wine (if using), tomato paste, bay leaf, and thyme to the crockpot, placing the browned ribs on top.
- Sprinkle minced garlic over the ribs and cover the crockpot.
- Cook on low for 480 minutes (8 hours) until the beef is tender.
- Remove ribs and vegetables from the crockpot, discarding herbs, and drizzle the cooking liquid over the ribs before serving.
Notes
For best flavor, let the dish sit overnight before serving. Serve with mashed sweet potatoes or steamed green beans.
