Description

Fall-off-the-bone tender beef short ribs cooked low and slow in a crockpot for a flavorful and comforting meal.


Ingredients

  • 3 Cups Baby Carrots
  • 2 Cups Mushrooms (sliced)
  • 2 Cups Beef Broth
  • 1 Cup Red Wine (optional)
  • 2 Tbsp Tomato Paste
  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 Tbsp Garlic (minced)
  • Salt and pepper, to taste
  • Bone-in beef short ribs


Instructions

  1. Season the short ribs with salt and pepper.
  2. In a skillet, melt butter and brown the short ribs on all sides.
  3. Place the browned short ribs in the crockpot with carrots, mushrooms, beef broth, and optional red wine.
  4. Sprinkle garlic, tomato paste, bay leaf, and thyme on top.
  5. Cover and cook on low for 480 minutes (8 hours).
  6. Once done, serve the ribs with the flavorful liquid drizzled over the top.

Notes

For a thicker sauce, remove the lid for the last hour of cooking.
