This creamy Tuscan chicken is rich, savory, and full of bold Italian flavor. Tender chicken breasts simmer slowly in a velvety garlic parmesan sauce with sun-dried tomatoes and fresh basil. Perfect served over pasta, mashed potatoes, or rice.
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- 2 tbsp olive oil
- 2 tbsp butter
For the Sauce:
- 1 ½ cups chicken broth
- 3 tbsp cornstarch
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 ½ tsp Italian seasoning
- ½ tsp red pepper flakes
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ⅓ cup sun-dried tomatoes, chopped
- ½ cup freshly grated parmesan cheese
- 10 fresh basil leaves, chopped
Instructions
- Season & Sear Chicken:
Mix salt, garlic powder, onion powder, and pepper. Season both sides of the chicken. Heat olive oil and butter in a skillet. Sear the chicken until golden brown on both sides (do not cook through). Set aside and reserve the pan juices. - Prepare the Sauce:
In a bowl, whisk together chicken broth and cornstarch. Pour this mixture into the crock pot. - Assemble:
Add heavy cream, minced garlic, Italian seasoning, paprika, red pepper flakes, salt, and pepper to the crock pot. Place the seared chicken breasts in the sauce. Pour the reserved pan juices over the chicken. Sprinkle in the chopped sun-dried tomatoes. - Slow Cook:
Cook on LOW for 6–7 hours. Do not cook on HIGH. If your slow cooker runs hot, consider adding the heavy cream during the last 30 minutes instead. - Finish:
Remove the chicken temporarily. Stir in the parmesan cheese until melted and smooth. Return the chicken to the crock pot and top with fresh chopped basil. - Serve:
Serve hot over cooked pasta, mashed potatoes, or rice. Garnish with extra parmesan and basil if desired.
Notes
Avoid overcooking by keeping the heat on LOW. This dish pairs beautifully with a side salad or garlic bread. Use freshly grated parmesan for best results.
