Description

A comforting lasagna soup made in a crock pot, combining the rich flavors of traditional lasagna in a simplified, hearty soup form.


Ingredients

  • 1 lb lean ground beef
  • 1 lb Italian sausage (mild or spicy)
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes (canned)
  • 4 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. In a large skillet over medium heat, brown the ground beef and Italian sausage until fully cooked. Drain excess grease.
  2. Sauté the chopped onion and minced garlic in the same skillet until translucent.
  3. In your crock pot, combine the browned meats, sautéed onion and garlic, crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Mix well.
  4. Add the broken lasagna noodles to the pot and stir gently.
  5. Cover the crock pot and cook on low for about 4 hours or high for about 2 hours until noodles are tender.
  6. Stir in the ricotta cheese before serving and top with shredded mozzarella cheese.

Notes

For best results, use high-quality ground meats and consider longer cook times for enhanced flavors. Can be customized to be gluten-free or vegetarian.
