Description

A rich, creamy, and spicy slow cooker Cajun chicken Alfredo made with tender shredded chicken, penne pasta, and a flavorful Cajun cream sauce. A comforting, one-pot family favorite with minimal prep.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 cups heavy whipping cream
  • 4 cups chicken broth
  • 4 tablespoons butter
  • 2 tablespoons Cajun seasoning
  • ½ teaspoon garlic powder
  • 1 lb uncooked penne pasta
  • 1 cup grated Parmesan cheese

Instructions

  1. Add Ingredients to Crock Pot:
    Place chicken, heavy cream, chicken broth, butter, garlic powder, and Cajun seasoning in a 6-quart crock pot. Stir gently to combine.
  2. Slow Cook:
    Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until chicken reaches 165°F internal temperature.
  3. Shred Chicken:
    Remove the chicken, shred using two forks or a mixer, then return it to the crock pot.
  4. Add Pasta:
    Stir in uncooked penne pasta. Cover and cook on HIGH for 20–30 minutes, stirring once, until pasta is tender.
  5. Finish with Cheese:
    Stir in grated Parmesan cheese. Cover and let sit for 5 minutes to melt and thicken.
  6. Serve & Enjoy:
    Serve hot, optionally garnished with extra Parmesan, chopped parsley, or red pepper flakes.

Notes

For extra spice, add a pinch of cayenne or use spicy Cajun seasoning. Stir the pasta once during the final cooking stage to prevent sticking. Substitute half-and-half for a lighter version.
