Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts
- 2 cups heavy whipping cream
- 4 cups chicken broth
- 4 tablespoons butter
- 2 tablespoons Cajun seasoning
- ½ teaspoon garlic powder
- 1 lb uncooked penne pasta
- 1 cup grated Parmesan cheese
Instructions
- Add Ingredients to Crock Pot:
Place chicken, heavy cream, chicken broth, butter, garlic powder, and Cajun seasoning in a 6-quart crock pot. Stir gently to combine. - Slow Cook:
Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until chicken reaches 165°F internal temperature. - Shred Chicken:
Remove the chicken, shred using two forks or a mixer, then return it to the crock pot. - Add Pasta:
Stir in uncooked penne pasta. Cover and cook on HIGH for 20–30 minutes, stirring once, until pasta is tender. - Finish with Cheese:
Stir in grated Parmesan cheese. Cover and let sit for 5 minutes to melt and thicken. - Serve & Enjoy:
Serve hot, optionally garnished with extra Parmesan, chopped parsley, or red pepper flakes.
Notes
For extra spice, add a pinch of cayenne or use spicy Cajun seasoning. Stir the pasta once during the final cooking stage to prevent sticking. Substitute half-and-half for a lighter version.
