Description
A rich and creamy one-pot Crockpot Cajun Chicken Alfredo, made with tender shredded chicken, perfectly cooked penne, and bold Cajun flavors. A comforting meal ideal for busy weeknights or meal prep.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 2 cups heavy whipping cream
- 4 cups chicken broth
- 4 tbsp butter
- 2 tbsp Cajun seasoning
- ½ tsp garlic powder
- 1 lb penne pasta (uncooked)
- 1 cup grated Parmesan cheese
Instructions
- Combine Ingredients: Add chicken, heavy cream, chicken broth, butter, Cajun seasoning, and garlic powder to the crock pot.
- Cook: Cover and cook on low for 4–6 hours or high for 2–3 hours, until the chicken reaches 165°F (74°C).
- Shred Chicken: Remove the chicken, shred it using two forks, and return it to the crock pot.
- Add Pasta: Stir in the uncooked penne pasta. Cover and cook on high for 20–30 minutes, or until the pasta is tender.
- Add Cheese: Stir in the grated Parmesan and cover for 5 minutes to allow it to melt.
- Serve: Serve warm with additional Parmesan and freshly chopped parsley if desired.
Notes
You can add spinach, sun-dried tomatoes, or mushrooms for extra texture and flavor. Adjust Cajun seasoning based on your spice tolerance.
