Description
Delicious crispy zucchini fritters that are golden on the outside and tender inside, perfect as a snack or side dish.
Ingredients
- 2 medium zucchinis, grated
- 1 cup Greek yogurt
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup chopped fresh herbs (such as parsley and dill)
- 1 tsp garlic powder
- Salt and pepper to taste
- Oil for frying
Instructions
- Grate the zucchini and place in a colander to drain for about 10 minutes.
- In a large mixing bowl, combine the drained zucchini, Greek yogurt, flour, eggs, chopped herbs, garlic powder, salt, and pepper. Mix well.
- Heat oil in a skillet over medium heat until it shimmers.
- Scoop a portion of the mixture into the skillet and flatten slightly to form pancakes.
- Cook for 3-4 minutes on each side until golden brown.
- Alternatively, cook in an air fryer at 375°F for 10-12 minutes, flipping halfway through.
- Serve warm and enjoy!
Notes
These fritters are best enjoyed fresh but can be refrigerated for up to 3-4 days or frozen for up to 2 months.
