Crispy Sweet Potato and Red Lentil Patties

Description

Delicious and nutritious patties made with sweet potatoes and red lentils, perfect for a meal or snack.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1/2 cup bread crumbs
  • 1/4 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying
  • 1 ripe avocado
  • 1/4 cup fresh cilantro
  • 1 tablespoon lime juice
  • Salt to taste


Instructions

  1. Cook the sweet potatoes in boiling water until tender, about 15 minutes. Drain and mash.
  2. In a pot, cook the red lentils in water until soft, about 15 minutes. Drain.
  3. In a large bowl, combine the mashed sweet potatoes, cooked lentils, bread crumbs, onion, garlic, cumin, paprika, salt, and pepper. Mix until well combined.
  4. Shape the mixture into patties.
  5. Heat oil in a pan over medium heat and fry the patties until golden brown, about 4-5 minutes on each side.
  6. For the avocado cilantro sauce, blend avocado, cilantro, lime juice, and salt until smooth.
  7. Serve the patties hot with the avocado sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, warm them in a pan over medium heat.
