Description
Delicious and nutritious patties made with sweet potatoes and red lentils, perfect for a meal or snack.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1/2 cup bread crumbs
- 1/4 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Oil for frying
- 1 ripe avocado
- 1/4 cup fresh cilantro
- 1 tablespoon lime juice
- Salt to taste
Instructions
- Cook the sweet potatoes in boiling water until tender, about 15 minutes. Drain and mash.
- In a pot, cook the red lentils in water until soft, about 15 minutes. Drain.
- In a large bowl, combine the mashed sweet potatoes, cooked lentils, bread crumbs, onion, garlic, cumin, paprika, salt, and pepper. Mix until well combined.
- Shape the mixture into patties.
- Heat oil in a pan over medium heat and fry the patties until golden brown, about 4-5 minutes on each side.
- For the avocado cilantro sauce, blend avocado, cilantro, lime juice, and salt until smooth.
- Serve the patties hot with the avocado sauce.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, warm them in a pan over medium heat.
