- 1 tablespoon vegetable oil
- Salt, to taste
- Chili flakes (optional for a bit of heat)
- Optional Garlic Chili Dipping Sauce:
- 4 tablespoons garlic mayonnaise
- 2 tablespoons sweet chili sauce
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the okra thoroughly. Trim the stalks but avoid cutting into the pods.
- In a bowl, toss the okra with vegetable oil, salt, and chili flakes until evenly coated.
- Arrange okra in a single layer on a baking sheet, ensuring pieces do not touch.
- Roast for 20–25 minutes, flipping halfway through, until crisp and golden.
- While the okra roasts, prepare the dipping sauce by mixing garlic mayonnaise and sweet chili sauce in a small bowl.
- Serve okra warm or cold, with the dipping sauce on the side.
Notes
Drying the okra thoroughly is key to avoiding sliminess. Serve with lemon wedges for added brightness. The dipping sauce can be made in advance and stored in the fridge.
