Crispy Dill Pickle Parmesan Chicken

Description

A beautifully cooked chicken marinated in dill pickle juice and coated in a crunchy crust of dill pickles, Parmesan cheese, and breadcrumbs.


Ingredients

  • 4 chicken breasts
  • 1 cup dill pickle juice
  • 1 cup crushed dill pickles
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil for frying


Instructions

  1. Marinate the chicken breasts in dill pickle juice for 1-2 hours.
  2. Preheat the oven to 400°F (200°C).
  3. In a bowl, beat the eggs and set aside. In another bowl, mix the crushed dill pickles, Parmesan cheese, breadcrumbs, salt, and pepper.
  4. Dip each marinated chicken breast into the egg, then coat with the pickle-Parmesan mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Add the coated chicken and cook until golden brown on both sides, about 4-5 minutes each side.
  7. Transfer chicken to a baking sheet and bake for 15-20 minutes, or until fully cooked.
  8. Serve hot with your choice of sides.

Notes

For an air fryer version, coat the chicken and air fry at 375°F for about 12-15 minutes.
