Description
A beautifully cooked chicken marinated in dill pickle juice and coated in a crunchy crust of dill pickles, Parmesan cheese, and breadcrumbs.
Ingredients
- 4 chicken breasts
- 1 cup dill pickle juice
- 1 cup crushed dill pickles
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Marinate the chicken breasts in dill pickle juice for 1-2 hours.
- Preheat the oven to 400°F (200°C).
- In a bowl, beat the eggs and set aside. In another bowl, mix the crushed dill pickles, Parmesan cheese, breadcrumbs, salt, and pepper.
- Dip each marinated chicken breast into the egg, then coat with the pickle-Parmesan mixture.
- Heat olive oil in a skillet over medium heat.
- Add the coated chicken and cook until golden brown on both sides, about 4-5 minutes each side.
- Transfer chicken to a baking sheet and bake for 15-20 minutes, or until fully cooked.
- Serve hot with your choice of sides.
Notes
For an air fryer version, coat the chicken and air fry at 375°F for about 12-15 minutes.
