Ingredients
- 1 cup cooked sweet potato (mashed)
- 1 can (15 oz) chickpeas (rinsed and mashed)
- 0.25 cup red onion (finely chopped)
- 2 cloves garlic (minced)
- 0.25 cup fresh cilantro or parsley (chopped)
- 0.5 tsp ground cumin
- 0.5 tsp smoked paprika
- 0.25 cup oat flour (or any flour of choice)
- Salt and pepper (to taste)
- Olive oil (for pan frying)
Instructions
- In a large bowl, mash the cooked sweet potato and chickpeas together.
- Add the red onion, minced garlic, cilantro or parsley, cumin, smoked paprika, oat flour, salt, and pepper. Mix well to combine.
- Heat a tablespoon of olive oil in a frying pan over medium heat.
- Form the mixture into small patties or fritters (about 2-3 inches in diameter).
- Carefully place the fritters in the hot pan and cook for 3-4 minutes per side, or until golden brown and crispy.
- Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
- Serve immediately and enjoy!
