Description

Delicious and healthy fritters made with sweet potatoes and chickpeas, perfect as a snack or meal option.


Ingredients

  • 1 cup cooked sweet potato (mashed)
  • 1 can (15 oz) chickpeas (rinsed and mashed)
  • 0.25 cup red onion (finely chopped)
  • 2 cloves garlic (minced)
  • 0.25 cup fresh cilantro or parsley (chopped)
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.25 cup oat flour (or any flour of choice)
  • Salt and pepper (to taste)
  • Olive oil (for pan frying)


Instructions

  1. In a large bowl, mash the cooked sweet potato and chickpeas together.
  2. Add the red onion, minced garlic, cilantro or parsley, cumin, smoked paprika, oat flour, salt, and pepper. Mix well to combine.
  3. Heat a tablespoon of olive oil in a frying pan over medium heat.
  4. Form the mixture into small patties or fritters (about 2-3 inches in diameter).
  5. Carefully place the fritters in the hot pan and cook for 3-4 minutes per side, or until golden brown and crispy.
  6. Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
  7. Serve immediately and enjoy!
