Ingredients

  • 1 cup Mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha, or more to taste
  • 2 tablespoons honey
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • ¾ cup All-purpose flour
  • ½ cup cornstarch
  • 1 large egg, room temperature
  • 1 tablespoon Sriracha
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper, optional
  • 2 cups panko breadcrumbs, plain
  • Canola oil, for frying
  • Parsley, chopped, for garnish


Instructions

  1. Heat canola oil in a frying pan over medium heat.
  2. In a large bowl, whisk together buttermilk, egg, and 1 tablespoon of Sriracha.
  3. In another bowl, combine flour, cornstarch, garlic powder, salt, black pepper, and cayenne pepper.
  4. Dredge the chicken tenderloins in the flour mixture, dip into the buttermilk mixture, then coat in panko breadcrumbs.
  5. Fry the chicken in hot oil until golden brown and crispy, about 6-8 minutes, turning once.
  6. Remove and drain on a paper towel-lined baking sheet.
  7. Drizzle with the prepared sweet chili sauce mixture and garnish with parsley.
  8. Serve with rice or vegetables.
