A cozy, creamy, and hearty one-pot white chicken chili perfect for any dinner occasion.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place the chicken, beans, corn, green chilies, onion, garlic, chicken broth, cumin, and oregano in the slow cooker.
- Season with salt and pepper.
- Cook on low for 6-8 hours or high for 4 hours.
- After cooking, remove the chicken and shred it using two forks.
- Return the shredded chicken to the slow cooker and stir.
- Stir in the heavy cream.
- Let it sit for a few minutes until everything is heated through.
- Ladle into bowls and garnish with fresh cilantro.
Notes
