Description

A cozy, creamy, and hearty one-pot white chicken chili perfect for any dinner occasion.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Place the chicken, beans, corn, green chilies, onion, garlic, chicken broth, cumin, and oregano in the slow cooker.
  2. Season with salt and pepper.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. After cooking, remove the chicken and shred it using two forks.
  5. Return the shredded chicken to the slow cooker and stir.
  6. Stir in the heavy cream.
  7. Let it sit for a few minutes until everything is heated through.
  8. Ladle into bowls and garnish with fresh cilantro.

Notes
