Ingredients

- 4 cups vegetable broth

- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Add the mixed vegetables and stir for a few minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes.
- Stir in the heavy cream and shredded cheese, mixing until the cheese is melted and the soup is creamy.
