Ingredients

- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3–5 minutes.
- Add the mixed vegetables and stir. Cook for a few minutes until they begin to soften and brighten in color.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes.
- Stir in the heavy cream and shredded cheese, mixing until the cheese is completely melted and the soup is creamy.
- Season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
