  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3–5 minutes.
  2. Add the mixed vegetables and stir. Cook for a few minutes until they begin to soften and brighten in color.
  3. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15 minutes.
  4. Stir in the heavy cream and shredded cheese, mixing until the cheese is completely melted and the soup is creamy.
