A quick and delicious creamy Tuscan salmon recipe that feels fancy yet is easy to make.
Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Season the salmon fillets with salt and pepper and add them to the skillet.
- Cook the salmon for 4-5 minutes on each side until cooked through, then remove and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute.
- Add the heavy cream, spinach, sun-dried tomatoes, and Parmesan cheese. Stir well.
- Allow the sauce to simmer for 3-4 minutes until it thickens.
- Return the salmon to the skillet and coat it in the sauce.
- Serve hot.
Notes
For variations, substitute spinach with kale or frozen spinach. Use half-and-half instead of heavy cream for a lighter option.
