Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the salmon fillets with salt and pepper and add them to the skillet.
  3. Cook the salmon for 4-5 minutes on each side until cooked through, then remove and set aside.
  4. In the same skillet, add the minced garlic and sauté for about 1 minute.
  5. Add the heavy cream, spinach, sun-dried tomatoes, and Parmesan cheese. Stir well.
  6. Allow the sauce to simmer for 3-4 minutes until it thickens.
  7. Return the salmon to the skillet and coat it in the sauce.
  8. Serve hot.

Notes

For variations, substitute spinach with kale or frozen spinach. Use half-and-half instead of heavy cream for a lighter option.
