Ingredients
- 4 chicken cutlets
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken cutlets with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add garlic and sauté for 1 minute.
- Add the sun-dried tomatoes and spinach, cooking until the spinach wilts.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese until melted and combined.
- Return the chicken to the skillet, spooning sauce over the top.
- Let simmer for a few minutes, then serve warm.
Notes
Serve over pasta, rice, or quinoa. Best enjoyed warm with garlic bread or a fresh salad. Top with extra Parmesan for added flavor.
